🍫Copycat Twix Bars
These are one of those desserts that remind me you don’t have to give up the things you love to nourish yourself well. A buttery, soft almond flour shortbread… a rich, gooey date caramel… and a silky chocolate layer on top. The best part? They’re made with simple, wholesome ingredients — gluten-free, dairy-free, and refined sugar-free — but still feel like the most special little treat. Because food made with love always tastes better 🤍
Ingredients
🍪 Shortbread Crust
- 1 ¼ cups almond flour
- 2 tbsp melted coconut oil
- 3 tbsp pure maple syrup
- 1–2 tsp vanilla extract
- Pinch of sea salt
🍯 Date Caramel
- 1 cup pitted Medjool dates
- ⅓ cup creamy peanut butter (or almond butter)
- 1 tbsp melted coconut oil
- 2 tsp vanilla extract
- ¼ tsp sea salt
- 2 tbsp almond milk (add more as needed)
🍫 Chocolate Coating
- 1 cup dark chocolate chips (I love Hu 🤎)
- 1–2 tbsp coconut oil
- 1 tsp vanilla extract
- Flaky sea salt, for finishing (optional but highly recommended)
Instructions

Make the shortbread crust — Preheat your oven to 350°F. In a bowl, mix together the almond flour, melted coconut oil, maple syrup, vanilla, and sea salt until a soft dough forms. Line a loaf pan with parchment paper and press the dough evenly into the bottom. Bake for 10–12 minutes, until the edges are lightly golden. Let the crust cool completely before adding the caramel layer — this is what gives you those beautiful, clean layers 🤍

Make the date caramel — Place your pitted dates in a bowl and cover with hot water. Let them soak for 10–15 minutes until soft, then drain. Add the dates, peanut butter, coconut oil, vanilla, sea salt, and almond milk to a food processor or blender. Blend until smooth, thick, and creamy. If your caramel feels too thick, add a splash more almond milk until it becomes silky and spreadable. (And yes… taste testing the caramel is part of the process 🤎)

Build your Twix layers — Spread the date caramel evenly over the cooled crust. Place the pan in the freezer for 30–60 minutes until the caramel layer firms up.

Add the chocolate layer — Melt the chocolate chips, coconut oil, and vanilla together in the microwave in 30-second increments, stirring each time until smooth and glossy. Pour the chocolate over the caramel layer and spread evenly. Finish with flaky sea salt if your heart says yes 🤍

Set & enjoy — Place back in the freezer until completely set, about 1 hour. Slice into bars and enjoy straight from the fridge or freezer for the perfect Twix texture. For the true candy-bar feeling, slice into smaller pieces and dip each one individually in chocolate 🤎
