🫐Ahavat Ava’s Blueberry Banana Chocolate Chip Muffins

There is something so comforting about a homemade muffin. Sweet blueberries bursting in every bite, melty dark chocolate, and just enough banana to make them unbelievably soft and moist. They’re the kind of muffins you bake once… and suddenly everyone is asking for the recipe. Naturally gluten-free, dairy-free, and refined sugar-free. Made with love, always. 🤍

Ingredients

  • 1 large ripe banana, mashed
  • 2 large eggs
  • ¼ cup melted coconut oil
  • ⅓ cup pure maple syrup
  • 2 tsp vanilla extract
  • 2½ cups (280g) blanched almond flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 1½ cups fresh blueberries
  • A handful (or two) of dairy-free dark chocolate chips… I never measure these. Just let your heart decide. 🤍
  • Optional: Zest of 1 lemon

Optional topping

  • Extra blueberries
  • Extra chocolate chips
  • Sprinkle of coconut sugar

Instructions

    Prep — Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with liners.

    Mix the wet ingredients — In a large bowl, mash the banana until smooth. Whisk in the eggs, melted coconut oil, maple syrup, and vanilla until well combined.

    Add the dry ingredients — Add the almond flour, baking powder, baking soda, and sea salt. Mix until just combined, being careful not to overmix.

    Fold in the blueberries & chocolate chips — Toss the blueberries with 1 tablespoon almond flour, then gently fold them into the batter along with your chocolate chips.

    Fill — Divide the batter evenly between the muffin cups, filling each about ¾ full. Top with a few extra blueberries, chocolate chips, and a sprinkle of coconut sugar for beautiful bakery-style muffins.

    Bake — Bake for 22–26 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a cooling rack.
