🥞Sunday Morning Banana Bread Pancakes
If banana bread and pancakes had a baby… this would be it. Soft, fluffy, filled with melty chocolate, and the kind of breakfast that makes everyone wander into the kitchen asking, “what are you making?” 🤍 Perfect for slow mornings, cozy weekends, or whenever you have a couple of ripe bananas sitting on the counter.
Ingredients
- 1 egg
- 2 small ripe bananas (or 1 large)
- ¾ cup buttermilk
- 1½ tbsp melted butter
- 1 tsp vanilla extract
- 1⅓ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp baking soda
- Pinch of salt
- ½ cup chocolate chunks… or honestly, chocolate from the heart. 🍫🤍
Instructions

Mash the bananas — Mash your bananas until mostly smooth. A few little chunks are perfect—they melt into the pancakes and make them taste just like banana bread.

Mix the wet ingredients — Whisk together the egg, buttermilk, vanilla, and mashed bananas until smooth.

Add the dry — Add the flour, baking powder, baking soda, and salt. Gently fold everything together until just combined. Don’t overmix. A few lumps are exactly what you want.

Fold it all together — Pour in the melted butter, then gently fold in your chocolate chunks.

Cook low & slow — Heat a buttered skillet over low-medium heat. Scoop about ¼ cup of batter per pancake. Cook until bubbles form on top and the edges begin to set, about 2–3 minutes. Flip gently and cook another 1–2 minutes until golden brown and fluffy.

- ✦The riper the bananas, the better. Brown, spotty bananas make these taste exactly like banana bread.
- ✦Cook them on lower heat than regular pancakes so the centers cook through before the outside gets too dark.
- ✦Chocolate is measured from the heart. I wrote ½ cup because recipes need measurements… but if you’ve been here for a while, you already know I never actually measure my chocolate. Add as much as your heart tells you. The more melty pockets of chocolate, the happier everyone will be. 🍫🤍
- ✦Let the batter rest for 5–10 minutes before cooking for even fluffier pancakes.
